Police cake

This cake is hot!!! A friend mine said it best lol. I was asked to make this cake by a lady who was a friend of a friend of mine (did ya get that). She told me that she was graduating from Police Academy  and she need a cake. Then she send me a picture of a cake that looked similar to this one.  So I said yes I can make that. I was excited to get started. I couldn't wait to make the gun!

As you can see here I simply used good ole rice krispy treats to make the gun, then covered with fondant. I think it is better than carving a cake into the shape you want.

The cuffs were just white fondant that I sprayed with the silver shimmer in the can.
I thought I would dye the white fondant gray using a little black paint. Why did that turn my fondant a light purple, What, how, who..I don't know!! Anyway, I figured it out. The badge was made the same way.

This part was a surprise. The baton was made with just fondant. She was excited when she saw this, because it was not in the picture she sent. I love to add unexpected things :)

Sorry I didn't do a step by step for this one. However it was a 2 layer lemon cake with lemon buttercream frosting. She loved everything about this cake!

Hamburger cupcakes!


Aren't these hambuger cupcakes the cutest you have ever seeeeen!!! I came across these on youtube and just had to make these. My "buns" did not come out as dark as I wanted them, but as you can see they came out cute anyway. The "hamburger" on these cupcakes could be your favorite brownie recipe or a box. I used  a box recipe, i can never make perfect homemade brownies. These would be soo cute for a kids birthday party, maybe a cookout, or a sports themed party. Or these can be a Saturday afternoon activity for the kids to make, then afterwards take them around the neighborhood on a nice summer day, and give them to neighbors. You can have so much fun with these. So lets get busy!

You're going to need:

vanilla or yellow cupcakes (I used vanilla)
brownies
sweetened coconut flakes, dyed green
buttercream icing (yellow and red) Check out my yummy buttercream icing here
pearl sprinkles




first lets color our buttercream, set aside

Color your coconut, place preferred amount of coconut in a ziplock bag, and a few drops of green coloring, close the bag and mix with your fingers til all flakes are colored

                                     
 Place your buttercream in piping bags or ziplock bags with a tiny tip of the corner cut off

Take your brownies and cut them with a cookie cutters, about the same size of the cupcake

Ta Da...patties!


 Now cut your cupcakes in half

Take the bottom half and add the 'ketchup"

Place on the "pattie" and add the "cheese or mustard"

then add the "lettuce" along the edge

Now the top bun, Then top with the pearl sprinkles for the sesame seeds

And there you go...hamburger cupcakes!

I added these little flags...sooo cute!

TIPS

*If you are using a box cake, stay away from those 'super moist, moist deluxe, mixes because you hamburger will not hold to good, at least not the bottom bun, as you can see in my pictures. Yep I used a moist deluxe mix, Big no no for these babies

Yummy buttercream icing



 Don't you just love butter cream!! I am a butter-cream-girrrl! I hate those, super sweet icings that they put on cakes that you order from the grocery store. Normally I would have had to request whipped icing, just so they wouldn't spread that tooth ache in disguise all over my cake. See that's why I make and decorate my own cakes now...all butter cream baby!
This recipe is delicious! It isn't too sweet, it's light and fluffy, and best of all, it's quick and easy...a winner every time! It's perfect for cakes, not so much for cookie decorating, because it doesn't get completely harden like royal icing. You can also add almost every flavoring to butter cream. The possibilities are endless when it comes to butter cream icing!

Mmmmmm...

Ingredients:
2 sticks of butter, softened
3 1/2 powdered sugar
1/2 t salt
1 T milk
1 t vanilla





mix the 2 sticks of butter, 1/2 t of salt and  the 3 1/2 cups of sugar, all together

Add the 1 Tbls of milk and 1 tsp of vanilla

Continue to mix til all incorporated. 
Yummy butter cream!

TIPS
 To color, just add a few drops food coloring, start with a few, stir, then add more til you get you desired color
I you are using this to write on a dessert, , place a small amount in a separate bowl, you will need to add  more milk, about 1/2 tsp at a time.

A polka dotted cake!!




This cake was so much fun to make! Before I made this cake I did some research, because I wanted this cake to be a success the first time. One good tip I learned was,  normally I would make my cake pops by hand, but after my research, I found out that, cake pops are a different texture, from the baked cake itself. So you would have a two textured cake...not good. So I went out and bought this mini cake pop maker only $10 at Walmart.  Great investment for this cake! Obviously it cut the time in half, instead of me baking a cake, crumbling it up, adding the icing, mixing, and shaping the balls, all I did was fill the little cups with batter and let them bake for about 2-3 minutes and they were done! Love this thing! So here is step by step instructions on how to make your own polka dotted cake!

First I mixed up my favorite white cake recipe. You can use two box cakes as well, as long as it is a white cake mix, so your colors will will mix well. The recipe that I use makes alot of batter so I had enough to scoop 1 1/2 cups of batter into each bowl. then add a few drops of your preferred color of food coloring, just til you get your desired shade of color

The instructions on the cake pop maker said to fill the cups with 1 tbls of batter, please don't do that. You will have a big mess. 1/2 tbls worked for me. So fill the cups and close the cake pop maker. Bake for 2-3 minutes. They bake pretty fast.

Once cake pops are ready, scoop them out with a butter knife by running the butter knife around the cake pop and then scoop it out, and place them on cooling rack til cooled. Please remember to grease the pans...I forgot and had to pour everything out and start over. Good thing I had lots of  batter to spare.  Once cooled, arrange them in two circles in an 8 inch pan.

Take the remaining batter and pour to cover the cake balls

Cover til you can just see lumps, I filled mine a little under a half full

 Bake according to your recipe, or according to the box. This is what it should look like after baking. See the little cake ball showing. I was getting excited when I saw them lol

So then after they had cooled, I stacked them and iced the cake. Just for fun I piped different color polka dots all over the cake, 

 And around the bottom


Okay now time to cut the cake!!

Isn't this the cutest!! I think I did great for a first timer!!

TIPS

*The only tip(s) that have is use more cake balls , fill up the cake pan.  When I cut maybe the third  slice of cake, it had only one polka dot. So more is better
*Remember to grease the pan
*Don't hand make your cake balls

M.A.C. Make up Cupcakes!!!

We all know that sharing make up is a big no no! But this makeup is a must share! They're M.A.C. make up cupcakes!!! Aren't they the cutest! I had someone ask me if can make strawberry and vanilla cupcakes...with M.A.C. make up on top. I thought  "ok, I've always wanted to make something that has to do with make up, so I was definitely gonna give it a try!


So two days after I made these, I made the left over batter just cause I didn't want to waste it. Sooo I baked them, ate them the next morning. Hold up let's rewind a bit. This was a new recipe, and I has never made cupcakes with is recipe. Okay back to the story, so I iced them and took a bite. There was confusion, disappoint and no moisture at alllllll! These cupcakes were an epic fail, and all I could think about is the makeup cupcakes that I had deliever two days prior. So I quickly sent her an email (didn't have number at the time) and I told here to be honest, how did they taste, and I told her what happened. She was so polite this was here response: 

Awh... Well..... They were not as moist as I would have liked them :)! But Im pretty sure you bake very well! I'm not mad at ya for trying a new recipe tho. That its fine if you want to make more, you don't have to. Its all up to you. I'll probably be placing an order around Valentines Day maybe you can keep me in mind around that time!!

So yes I made her some more strawberry and vanilla cupcakes, without the makeup, and used my original recipe. I delivered them 3 days after our conversation. 

Pedals pedals pedals...for your your cake!!




Some may look at this cake decor and be like "whoa, I can't possibly do that, it would take forever!" Well let me tell you it is no where near as hard as it looks, believe me. I had put it off long enough, Finally, I said to myself  "I am a cake decorator and I up for this challenge!! Guys this was my very first pedal cake.... perfecto!!! Although it takes a little while, (about a good 15-20 minutes for a 9 in. 2 layer cake for first timers) it is so worth it!  I baked a smaller cake this time, so it won't take as long. So now it is your turn. I am going to show you step by step instructions on how to make this cake yourself and amaze you friends and family! So hang out for a while and watch me bake it up beautiful!! Gotta sing that out loud...bake it up beautifuuuuulllll! Ok lol.

Supplies and Ingredients
A 2 layer cake, I used (6 inch pans)
3 cups of buttercream frosting 
A spreading spatula 
1 piping bag 
1 coupler set
#12 tip
scissors
A cake spinner or a lazy suzy
And whatever you are going to have your cake set on. I didn't have any cake boards so I used 2 small paper plates.




First we need to assemble our piping bag for the frosting. (You can find all of these pieces from any cake decorating store)Cut a good bit of the tip off the piping bag

Slide the coupler inside


Now add your  #12 tip over the coupler opening 

Finally twist on the cap, and it's ready for the buttercream


So now fold the opening of the bag outward over your hand, sort of like you are holding a cup

Scoop out he frosting and while holding the bag as wide as you can with your fingers, insert the frosting to the bag using your thumb to hold it in the bag while you pull the spoon out.
Ok place a dab of frosting onto your cake resting plate. This will help hold the cake in place.

Place the cake on top of the dab of frosting and add the frosting

Place the 2nd layer on top and fill in the middle. Doesn't have to be pretty

Okay you are going to squeeze out 4 dots. Making sure you start at the very top. Even if you have to go passed the top edge a little. to pipe, all you do is, Squeeze, stop, pull away. Squeeze, stop, pull away

So normally I would use the spatula above but since this is a smaller cake, we need to make smaller dots, I'm using the end of this pastry brush. So what you do is press in the center of the dot, (not to deep to where you touch the cake)

Then as you get to the end of that dot, smear it to the cake
 do that technique all the way down. Make sure clean the spatula after each dot. by wiping on the top edge of a bowl or towel. This keeps your pedals looking neat.
The next set of pedals will be overlapping the first set of pedals. 



When you are almost done, it will get a little tricky, trying to smear without messing up the first row you did. I just say do the best you can :)  and that last set will just be dots, no smearing.

Now for the top of the cake, we are going to pipe frosting all around the otter edge

Same overlapping technique, pulling it to the center

All the way til you get to the center. which can then be a series of dots or a swirls with the frosting

And there you have it!! 


This was a Hello Kitty cake that I made for my daughter's  13th birthday, using the pedal technique
